The ancient Mayans, one of the most advanced civilizations of their time, knew the power of raw cacao, but do you? Bring your chocolate fantasies to life and indulge with contemporary chocolate creations made to celebrate love, just in time for Valentine’s Day!

Raw cuisine describes the use of plant-based nutrition sources including fruits, vegetables, grains, nuts and seeds to create innovative dishes which retain and most often far exceed cooked varieties in taste, texture, appearance and most of all, nutritional value. Raw and living food is typically minimally processed, free from ingredients derived from animal products, and not heated to a temperature over 115°F during harvesting, processing or production. Raw chocolate—unroasted cacao beans, cacao powder, and cacao butter—has numerous reported nutritional benefits, including being one of the highest dietary sources of magnesium, and also contains antioxidants, flavanols, iron, and fiber. In addition, some sources claim that chocolate is an aphrodisiac, and was used as a Mayan love potion!

Jennifer M. Robertson was trained in the Fundamentals of Raw Cuisine at The Matthew Kenney Academy in Oklahoma City, USA—the world’s first and only classically structured raw and living foods education center. In this themed class, she will teach you to feed your loved one the very best by demonstrating how to make raw chocolate delights (without cooking) which are free from dairy, egg, gluten, wheat and artificial ingredients, as well as give a brief background on Theobroma cacao and its journey from farm to table.

On the menu will be:
•    Dark Chocolate Truffles
•    Chocolate Candy Hearts with Strawberry Filling
•    Parisian Chocolate Torte
•    Decadent Chocolate Ice Cream

Participants will be able to sample all items made in the class and will receive an informational handout about raw food, as well as the recipes for the items made during the class.
